History & Production
While there are numerous species of agave, the one we use in Sohgave! is called “blue weber agave.” This most remarkable plant is cultivated, harvested, and produced by the natives of Mexico with the same care they have devoted to this crop for thousands of years. It is grown at high altitudes in sandy soil—in just the right climate to help it flourish.Although many people think agave is a cactus, it is actually a rosette-shaped succulent with large, thick, fleshy leaves that end in a sharp point. These spiky leaves can grow to over two meters in length!Agave plants sprout shoots that eventually flower, and it is during the development of these flowers that the plant produces a rush of sweet sap commonly called “nectar” or less commonly, “syrup.” Nectar is made by taking juice from the agave’s pineapple-like core, then filtering and heating it. The sweet, golden nectar from the blue weber agave is known throughout the industry as the highest quality agave available.

Light Sohgave!

Amber Sohgave!
