Power Breakfast Chia Seed Pancakes with Spiced, Caramelized Apples

These pancakes combine fiber-rich oat flour with the nutrient dense superfood, chia. Chia is full of Omega 3s, antioxidants, and fiber, making it an ideal food for breakfast. Great for pre-workout, kid's breakfast or even as a snack throughout the day! Delicious simply with Sohgave! Maple Flavor Agave Syrup or the spiced apples that are quick and easy to make.
Ingredients:
- egg whites (beaten) - 2
- nonfat yogurt (plain) - 1 cup
- water - 1 cup
- agave nectar (Sohgave! Light) - 1 tablespoon
- vanilla extract - 1/2 teaspoon
- olive oil (extra virgin) - 1 tablespoon
- flour (whole oat) - 1 cup
- chia seed (ground) - 3 tablespoons
- baking powder - 1 teaspoon
- baking soda - 1/2 teaspoon
- cinnamon - 1/2 teaspoon
- sea salt - pinch
Instructions:
- Mix egg whites, yogurt, water, agave nectar, vanilla and olive oil in a large mixing bowl
- In a separate bowl, mix together all dry ingredients
- Add dry ingredients to the wet and mix well
- Drop approximately 1/4 cup onto a large, lightly oiled skillet
- Cook over medium heat for 2 – 3 minutes
- Flip and cook until golden brown
