Orange Pecan Granola

Great on its own as a snack, or sprinkle it over yogurt, fresh fruit, or even frozen yogurt for dessert.
Ingredients:
- oats - 6 cups, regular, rolled (not quick cooking)
- oat bran - 1 cup
- flax meal - 1 cup, ground
- almond meal - 1 cup (ground raw almonds)
- sesame seeds - 1/4 cup
- unsweetened applesauce - 1 3/4 cups
- agave nectar (Sohgave! Light) - 1 cup (or 1 1/3 cups for sweeter granola)
- vanilla extract - 1 tablespoon
- orange extract - 1 tablespoon
- cinnamon - 2 1/2 tablespoons
- cloves - 1/2 teaspoon
- nutmeg - 1 teaspoon, freshly grated
- sea salt - 1/2 teaspoon
- canola oil - 1/4 cup
- currants - 1 cup (or use raisins)
- pecans - 1 1/2 cups, coarsely chopped (try other nuts for variety)
Instructions:
- Preheat oven to 300 degrees
- Combine all ingredients except pecans and mix well (agave nectar)
- Add pecans and mix again
- Spread mixture evenly on a lightly greased cookie sheet
- Bake until slightly golden—about 1 hour, stirring occasionally
- Remove from oven, stir in currants, and let cool
