Apple Streusel Coffee Cake

This is a great, really low-fat tea or coffee cake. It's full of whole grain goodness, and is super-moist because of the yogurt and apples. Perfect any day of the week for a not-too-sweet treat!
Ingredients:
- canola oil - 1 tablespoon
- egg substitute - 1/4 cup, (or 2 egg whites, beaten)
- applesauce - 2 tablespoons, unsweetened
- agave nectar (Sohgave! Light) - 3/4 cup
- yogurt - 1/2 cup non-fat, plain
- vanilla extract - 1 1/2 tablespoons
- spelt flour - 2 cups, sprouted (or use 1 cup barly flour and 1 cup oat flour)
- baking powder - 1 teaspoon
- baking soda - 1 teaspoon
- cinnamon - 2 teaspons
- nutmeg - 1/2 teaspoon
- cloves - 1/4 teaspoon, ground
- allspice - 1/4 teaspoon
- apples - 2 cups, peeled, cored and diced (Cortland, Granny Smith or McIntosh)
- raisins - 1/2 cup
Instructions:
- Preheat oven to 325 degrees
- Lightly oil an 8" round cake pan
- In a medium bowl, beat canola oil, agave nectar, egg substitute or egg whites, applesauce, yogurt, and vanilla extract with a wire whisk
- In a separate bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, cloves, allspice, and apples
- Stir this mixture into the egg mixture until just combined
- Pour the apple batter into the prepared pan
